Go to  (or) Settings > Language and input and select the first option on the top of the screen. Then select the language of your choice.

Please note that it will also change the default virtual keyboard. You can change the keyboard and adapt it to your needs in Language and input > Keyboard & Input Methods and then select  next to Google Keyboard.
